out of state plates are a NO-NO!

So, yes... ok I MAY have known that technically you are suppose to change your car license plates within 60 days of moving... hmmm, or is it 30? W/e 30, 60, same thing. Anywho... I moved back to Florida 2 1/2 years ago and I guess it slipped my mind. I got TWO tickets yesterday for it though...joy. So, now I will not be driving my car til we get a copy of the title, etc, etc so we can get Florida tags. Which unfortunately means I have to drive dh to AND from work so I can still be a taxi driver to a teenager lol. Oh, and btw.. did I mention he works an hour from home...yep FOUR HOURS A DAY in the car!!!! Forget gas... my sanity will be gone first. Guess we can homeschool on the go! :P





I did want to share with you that absolutely lusciously, amazing dessert I made last week though! OMG it was so yumm, and so light and satisfying. It is a great summer dessert. And, for once it came out just about as pretty as the one in the cookbook! Yay me!





It was soooo yum, and I am ashamed to say it is the first time I made homemade whipped cream...and I am HOOKED! I can see so many yummy things to eat it with! hehe. I did alter the recipe a bit from its original version, the original was from Good Housekeeping the "Baking" Cookbook. My recipe follows:

Berries n Cream Cake

Ingredients:

1 stick of softened sweet cream butter

1 pat of butter

1 cup of sugar

2 - 3 tbsp sugar (depends on how sweet you like it)

1 1/2 c cake flour, sifted

1 1/2 tsp baking powder

2 tsp vanilla

1/4 tsp salt

2 eggs

1 pint blueberries

1 pint strawberries

1 pint blackberries

1 pint raspberries

1/2 c seedless strawberry jam

1 c heavy whipping cream


Preheat oven to 350 degrees, grease and flour two 8 inch round cake pans.

In a mixing bowl beat the softened stick of butter with the cup of sugar until light and fluffy. Gradually on low add flour, milk, baking powder, vanilla, salt, and eggs. Increase speed and beat about 2 min until fluffy (will be slighter thicker than normal).

Spoon batter into pans equaly and bake approx 20 min (my oven is a litter hotter than it should be so you may need a few more minutes). Cool completely. (I put mine in the refrigerator and assembled the desser the next day).

Put the jam and pat of butter into microwave, heat until the butter melts. Stir together and let cool. Then in a bowl toss the freshly washed berries with the jam mixture.

Beat the whipped cream and the 3 tbsp of sugar until stiff peaks form.

On a serving plate, place 1 layer of cake, half the whipped cream, half the berry mixture and then repeat. If you are not serving immediately you must refrigerate it to keep whipped cream from melting.

I can not tell you how long it can be stored... we have never made it that far.

  2. Oh, that's too bad about your license plates! Our state has a similar law, but it doesn't seem to be enforced a lot, especially since we have a lot of winter residents here.

  4. LOL, I'm sorry I don't mean to laugh but 2 1/2 years with nothing then 2 tickets in one day? Now I don't feel so bad about my yearly tradition of waiting until the week before my inspection sticker is going to expire to make an appointment....lol
