Chocolate Snowdrops
These cookies are ridiculously addictive, I warn you! They are soooo easy to make as well!
You need:
1 box of devil's food cake mix
8 oz cool whip
1 egg
powdered sugar, for coating.
we doubled the recipe:
All you need to do is add the cake mix, and the egg to a bowl, slightly break up the egg so it will mix in easier. Add the cool whip and then fold the ingredients together ... folding preserves the air*yness* off the mixture. There will come a point where it will become impossible to fold as it is SO sticky and thick...that is ok, just gently stir at this point. Just work it together til it is all mixed. It is a very thick and sticky mixture unlike other cookie mixes...do not worry, that is perfect! :)
Then you are going to take a spoonful of the mixture and drop it into a bowl of powdered sugar, coating thoroughly, and rolling into shape, then place on a greased cookie sheet (I sprayed mine with Pam). Give them a little room to spread...about 1 inch apart. Do NOT try to roll into a ball before coating ... lol ... dd tried that, bless her heart!
Then take your lovely tray full of yummyness and bake it at 350 degrees for 12 minutes ... exactly.
Take the tray out of the oven and let cool completely on the tray (I used parchment paper so I could slide the whole thing off to cool and did not have to wait to use the trays again). You need to do this because these cookies will be VERY soft and feel almost undone and then fall apart lol. Once they cool they will be firm and yummy. They will however be soft cookies. They have a consistancy between a cake and a brownie.
Also if you want to make a big batch they freeze beautifully!
YUM!!!! Maybe someday I'll be domestic enough to make these. :)
