Lemon Glazed Blueberry Scones!

I have been using those blueberries I showed you that we picked. It may sound silly, but it just feel so awesome to pick something, bake with it, eat it, all knowing I had a hand in all of it. A city girl lovin' a little bit of country! :)

These scones were pretty darn good! You have to give them a try!

***Pay no attention to the wonky shapes... it was the first time I made scones lol***



Lemon Glazed Blueberry Scones

2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
3 tablespoons sugar
5 tablespoons of cold butter, cut in chunks
1 cup heavy cream, plus 2 tablespoons for brushing on the scones
1 1/2 cup fresh blueberries

Lemon Glaze:
1/2 cup freshly squeezed lemon juice
2 cups powdered sugar
zest of 1 lemon, finely grated
1 tablespoon butter

Preheat the oven to 400 degrees.

Mix together the dry ingredients. Cut in the butter until the mixture is crumbly. Then add the cup of heavy cream, do not over mix. Fold in the blueberries.

Dough will be sticky. Press it out on a lightly floured surface, into a rectangular shape, approx a foot long by 4 inches high. Cut that in half, vertically. Then cut each half in half. You will then have 4 rectangles. Now cut each section into half diagonally to form triangles.

Put triangles onto cookie sheets, brush with the 2 tbsp of cream. (Cream will darken faster than scone so do not drench them) Bake for 15 to 20 minutes, until browned lightly. Let cool, while you make the glaze.

Mix the lemon juice and powdered sugar in a bowl, stir until dissolved. Add butter and lemon zest. Microwave for 30 seconds. Whisk to remove lumps. Drizzle over the cooled scones.

Then.... EAT! oh my yumm!
