If you like to make multiples and freeze stuff, just fyi... muffins freeze really well! You can freeze them individually and just microwave them for about 15 to 30 seconds and viola, fresh warm muffins!
Blueberry Streusel Muffins
1 1/2 cup milk
1/4 cup vegetable oil
1 teaspoon vanilla
1 egg
2 cups all-purpose flour
1/2 cup sugar
3 teaspoons baking powder
1/2 teaspoon salt
1 cup fresh blueberries
Streusel Topping
1/4 cup all purpose flour
3 tablespoons packed brown sugar
2 tablespoons firm butter
1/2 teaspoon ground cinnamon
Preheat oven to 350 degrees.
Mix streusel ingredients together until they are crumbly. Can you you fingers or a fork for best results.
Mix the dry muffin ingredients together. In a separate bowl mix the wet ingredients. Add the wet ingredients to the dry ingredients, stir to incorporate, batter will be slightly lumpy. Fold in the blueberries.
Divide among 12 muffin cups (use liners or grease the pan), then divide the topping amongst them.
Bake for 20 to 25 minutes or until the muffins are golden brown and a toothpick inserted in the center comes out clean.
