Husband Approved Meatloaf

Ok, so I am a comfort food kinda gal. One of the things that I love is meatloaf, but my husband hates it! So, I found a recipe similar to this one ...though I can not remember where. I adapted it quite a bit though and it is perfect for our family now. The only thing I like is a little more salt on it when it is served, but that varies upon the person. 

Now... my husband looks forward to meatloaf night. Oh, and btw do not forget I feed 7 and this is one of the things I make extra of and we all have meatloaf sandwiches the next day or I freeze it for a later dinner.

Husband Approved Meatloaf



4 lb ground beef
2 lb ground pork
1 medium onion, chopped
1/2 c BBQ sauce (from a new BBQ bottle)
1 tbsp yellow mustard
2 eggs
1 tsp salt
1/2 tsp pepper
1 tsp liquid smoke
12 slices ready cooked maple bacon, chopped
1 1/2 c crushed potato chips

Mix everything together. Shape into a loaf in a large baking dish. Use the rest of the BBQ sauce ontop of the meatloaf. Spread it evenly across the top. COver the meatloaf with foil and cook for 1 1/2 hours at 350 degrees. Then uncover and bake for 30 to 40 minutes more until nicely browned. 

*I refuse to eat any ground meat unless fully well done, it's a texture thing. So if you prefer a less done temperature just reduce the cooking time.

If you are going to freeze half of it, let is cool completely first. Once frozen you can simply put it in the oven on 350 right from frozen until heated through, time depends on the size of the piece about an hour.

  8. As much as I hate to point it out to you, your recipe says to uncover and SERVE for 30-40 minutes more. It takes you that long to serve your meatloaf?...rofl.
