Cabbage Roll Casserole

If you like Cabbage Rolls but hate the hassle of them, this is a good dish for you. I love them, and I love the taste of the tomato sauce and meat with the cabbage, it is hearty and yummy! It is a great stick to your ribs kind of meal! However, I do not like standing in the kitchen blanching cabbage leaves, rolling them, trying not the break them, cooking them for hours so they are perfect....bleh!

This is yummy, husband and child approved (believe it or not!), and not too time consuming!


2 lb ground beef
1 large onion, chopped
1 med head of cabbage, chopped
28 ounce can of diced tomatoes, with juice
28 ounce can of tomato sauce
salt and pepper to taste
1 tbsp dried oregano
1 tbsp dried basil
1 tsp garlic powder
*cooked rice to serve over

Brown the ground beef and the onions with salt and pepper to taste. 
In a large bowl put chopped cabbage, tomatoes with sauce, tomato sauce
and seasonings. Add the browned beef and onions, mixing to thoroughly
coat with seasonings and sauces. 

Bake in a 350 degree oven, in a 9x13 inch pan approx 45 min until cabbage is tender.
Then serve over your cooked rice.

**if you get an overly large head of cabbage you can either remove some of the cabbage, or add it half at a time to the rest of the ingredients to insure you do not have too much.

  3. Yum! Cabbage rolls are a TON of work, and this looks like an awesome alternative I'll have to try! I'm sure it'd be great over mashed potatoes, too.
