Leftover Ham, Ham Casserole

Every once in awhile my dh gets a bug up his behind and wants to make a huge family dinner with a big ham or turkey etc even when it is not a holiday! lol I love him...but, really? Anyway we had about 900 pounds of ham left over ... well ok I exaggerated a little, it was more like 4 or 5 pounds. So I wanted to make a yummy, warm, and hearty casserole. Well... I made it and now I am going to share it with you!


Leftover Ham, Ham Casserole.


1lb package of egg noodles
3c cubed ham
1 onion, diced
1c sour cream
1c cream of chicken soup, undiluted
8oz shredded freshly shredded asiago
1c frozen peas
8oz freshly sliced mushrooms
1 tsp salt
1/2 tsp pepper
1/2 tsp garlic powder
1 sleeve of Ritz crackers
2 tbsp butter


Preheat the oven to 350 degrees F.
Cook the egg noodles until al dente. Drain and set aside. 
In a large bowl Combine all ingredient except Ritz crackers and butter.
Mix thoroughly to combine all ingredients, spread into a 9x13 inch pan.
Crush the Ritz crackers and place in a seperate bowl, melt the butter and
combine with the crackers. Then crumble over the casserole.
Cover with foil, bake for 40 minutes, uncover and bake 10 to 15 minutes
more to brown and crisp the topping.
