Savory Tomato Side Dish

Well, I paid WAY too much money for these huge, beautiful tomatoes. However; they were worth it. Plus this is a great recipe to keep in mind as summer comes closer, tomatoes will be more reasonable, and many of you will even be growing your own.

I originally found this idea on Pintrest, which I love now for bookmarking all my crafty, kitcheny, and inspirational ideas!

You really should try this though. If not now, bookmark it for later when the tomatoes are begging to be used in a deliciously different way! The key here is to use fresh things! Trust me!

Baked Parm Tomatoes



Ingredients:

Big, beautiful tomatoes
freshly shredded Parmesan cheese
fresh oregano
salt and pepper
olive oil
*balsamic vinegar

Cut the top of the tomato off, leaving a flat surface, I cut about 1/3 off. (we just saved, salted, and ate them)  Salt and pepper the tomatoes, to your liking. Sprinkle with a generous amount of Parmesan cheese, lay a sprig or two of oregano on top of each tomato. Sprinkle a little more cheese so the oregano bakes in and sticks to it. Use a small dash of olive oil on each tomato and bake at 375 degrees F for 15 minutes.

The parm will have a hard texture if you try to eat this with just a fork, it will not be hard though I promise. use a knife and cut up and then sprinkle Balsamic on it, and it is heavenly!!! It totally melts in your mouth.
