Strawberry Crumble Bars
1 cup white sugar
1 teaspoon baking powder
3 cups all-purpose flour
1 cup cold unsalted butter (2 sticks or 8 ounces)
1 egg
1/4 teaspoon salt
Zest and juice of one lemon
4 cups fresh strawberries, cut into smaller pieces
1/2 cup white sugar
4 teaspoons cornstarch
Preheat the oven to 375, and grease a 9x13 inch baking pan.
In a large bowl, combine flour, 1 cup of sugar, baking powder, salt, and lemon zest. Using a mixer beat in the egg and cold butter... a little persistence and you will have a crumbly dough. It takes a few minutes but it is SO much easier than doing it by hand.
In a separate bowl, combine lemon juice, corn starch and 1/2 cup of sugar. Stir in the berries until well coated.
Press half of the crumble/dough mixture into the pan, forming the crust. Pour the strawberry mixture
on top of that, spreading semi evenly. Pour the rest of the crumble/dough on top.
Bake for 45 minutes, and let cool completely before attempting to cut or they will be too soft.
Just look at that yummy texture! I made this as an after school snack last week and the girls absolutely loved them. Also we had a couple left over that I refrigerated for the next day and they were even better! Enjoy!
