It's Thursday, have some cobbler!

Morning, y'all!

I have to sincerely apologize for the absolutey horrific picture I am about to share with you regarding my cobbler! :(

First of all ... it was so intoxicating in its delicious smell I completely forget to photograph it. Secondly, when I did remember, we were all devouring it like so many starved piggies that all that was left was some mess in the pan! *insert embarassed look here* So my cobbler:

Again, I'm just a mom that loves to cook and bake, not a fancy schmancy baker like my sister! *Gah her talent drives me insane lol* But it tasted awesome and it made my family happy!

Now, if you are better are it, it might end up looking like these yummy pics I pulled off the internet:


Oh yes....the vanilla ice cream, lazily melting all over it is absolutely essential!

Here is my recipe for it

Topping Ingredients:

2 cups of flour

1 tsp baking soda

1 tsp cream of tartar

6 tbsp of sugar

1/2 tsp salt

4 tbsp butter, cold

1/2 c milk

1/4 c heavy cream


Filling Ingredients:

2 tbsp butter

2 pounds peaches, (I used the jar ones in the produce section)

1 c sugar

1 c water (or peach juice/syrup if you use canned)

2 tbsp flour

1 tsp lemon juice

2 pints of blackberries

2 tsp vanilla (the real stuff is preferable)


Directions:

Preheat oven to 350 degress. Butter an 8 x 11 casserole dish (or spray or grease or what evah!)

In a large bowl, combine the flour, baking soda, cream of tartar, sugar, and salt. Cut in the butter until the mixture resembles coarse crumbs. Add the milk and cream and stir just to combine. Do not overwork the dough. Pat the dough into a flattened disk, wrap with plastic wrap, and refrigerate until ready to bake the cobbler.

In a medium saucepan, combine the peaches with the sugar, water or syrup, flour (I mix the flour with the syrup first to avoid lumps then add to pan), and lemon juice. Bring to a boil over medium-high heat and cook, stirring frequently, until sauce thickens and peaches have softened, about 7 minutes if fresh, just long enough to thicken sauce if canned. Remove from the heat and stir in the remaining 2 tablespoons butter, blackberries, and vanilla. Transfer to the prepared baking dish.

On a lightly floured work surface, roll the dough out to a thickness of about 1/2-inch. You can either cut out biscuit shapes and top on the fruit mixture, or as I did; just roll it out and place it in one sheet on top of the cobbler.

Sprinkle extra sugar on top of dough, just a dusting.

Bake approx 30 min or until dough is golden brown and filling is bubbly and thick around the edges.

Serve about 10 to 15 minutes after coming out of the oven, and top with ice cream. Great flavors are vanilla, butter pecan, or dulce de leche!
