Pumpkin Butter

Yup...finally made something pumpkiny. If time ever allots I will get to my pumpkin bread, too! Seriously, can you believe that it is almost Thanksgiving here in the US? Good grief!
This turned out really good and my littlest help me make it. She measured and helped stir and then got bored but kept coming back for taste tests. I have the BEST ever direct quote from her lol!
While the pumpkin butter was simmering and she was stirring (and taste testing) she says, and I quote, "This is like a boiling vat of yummyness!" lol Yep that is what an 8 yr old thinks of pumpkin butter!
The girls love it on bread... check out the pick with the grubby kid handing pulling it away by the eldest no less, all while insisting I took enough photos one of them HAD to turn out could she just eat it puhlease?!?!


They also love it on a big ole spoon, with a dollop of whipped cream hehe.

Anyway, here it is :) Enjoy!


60 0z canned pumpkin
2 c apple cider
3 tsp ginger
1/2 tsp cloves
4 tsp cinnamon
2 tsp nutmeg
2c sugar

Combine all in a pot, heat on medium, then turn down and let simmer 30 to 45 min on a low temp. Can be frozen for up to 6 months, or refrigerated for up to a month...though I would only keep frigerated in smaller batches for less time, about 2 weeks I would say.
You can also use this to add to other things you bake for a yummy pumpkin flavor.

Of course you can cut this directly in half for a smaller amount. We have, like, a gargantuan family so I made a lot. It made that bowl full which is in the frig, another bowl full, which I froze, and a smaller bowl that is frozen as well.

Vat of boiling yummyness ... *snickers* kids!

  7. That looks kinda similar (texture and color) to what we have here, we call it 'Kaya'. But it's made from coconut milk and sugar and .. urmmm... I have no idea! LOL!
