Wonderful weekend and Pumpkin Bread!

We had a really great weekend, this past weekend. Dh was home from a business trip, we were all in a good mood, the weather was true Florida beautiful weather, it was just awesome!

We had a fun family night where we watched the Transformers 2 movie...which ROCKED! We also played a new game we got called 'Gestures.' Basically it is charades but you do not pick the words and it is fast paced. It was really cute and a lot of laughs! Plus I think the kids got a kick out of mommy and daddy acting like fools! hehe.

So yea, my pumpkin bread...I have to warn you...this is THE BEST EVER pumpkin bread recipe and you are going to <3


Pumpkin Bread:

3 1/4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground nutmeg
2 cups solid pack pumpkin puree
1 cup vegetable oil
1 teaspoons salt
1 1/2 teaspoon ground cinnamon
3 cups white sugar
2/3 cup water
4 eggs
Optional: raisins, nuts ... this one had neither.


Mix all the dry ingredients, make sure everything is evenly mixed in.
Mix all wet ingredients, incorporating fully.
Slowly add dry ingredients to wet, mixing in thoroughly before adding more.
Grease and flour 2 loaf pans, or 1 large loaf pan.
Bake at 350 degrees for approx 1 hour ...oven very, mine takes 70 min, just watch carefully after 50 minutes and cook until it no longer jiggles on top and a tooth pick or knife comes out clean.
Let it cool in the pan before removing.
