Caprese Quiche

This was just one of those A HA! moments for me. lol. I love mozzarella and tomatoes with balsamic vinegar. Actually I kinda like all kinds of vinegar...just something about the Polish/ German part of me I guess! lol

I make quiches quite often for a couple of reasons. 1. They are extremely easy 2. They are a throw it together with what you have kinda thing 3. They are SO tasty and 4. They always look like a lot more effort went into them then actually did! The girls absolutely love quiche and they said that this was their favorite yet, so I guess I did something right! :)

So, here it is: Caprese Quiche



one dozen eggs, scrambled
one cup heavy cream
one pound heirloom tomatoes
two 6-8 ounce balls of mozzarella
4 tbsp freshly chiffonaded basil
salt and pepper, to taste
2 ready made pie crusts (I used deep dish and no I didn't make em! lol)
balsamic vinegar, to taste
Preheat the oven to 350 degrees.

Thinly slice the mozzarella balls. Arrange them around the bottom of each pie crust, one ball to a crust. Thinly slice the tomatoes and arrange them into the pie shells, on top of the cheese. Salt and pepper the tomatoes to taste. (Salt loves tomatoes!)

In a bowl, combine the eggs, milk, basil, and salt and pepper to taste again. Mix thoroughly.
Pour the egg mixture over the pies, half in each shell.

Place both pies on a cookie sheet and bake at 350 degrees for approx 45 minutes, or until golden brown and set fully.

When serving splash a balsamic vinegar on top, to taste. I am heavy handed when splashing my own! lol YUMMM!

  1. It looked like there was spinach in it from the picture. Hmm guess that's the basil. Anyway, looks delicious but I highly doubt Wade would eat it, he's so darn picky

  2. I am like Wade I am kind of picky. But that sounds great. I would like to try it. I like a good red wine Vinegar. Maybe I'll try that. Or once again, maybe I'll just over to your house.LOL
