Chicken a' la King

Ok, this is sort of an old fashioned recipe, but oh dear it is so very yummy. This is definitely a comfort food kind of recipe. It is great for cold nights when you really want something warm and hearty in your stomach. My girls love this, and you can serve it over noodles, rice, even toast. We always prefer rice.  I wish I had a better photo for you, but again..I am no professional, just a mom who can cook :)


Chicken a' la King

1/2 c butter
1 green pepper, chopped
6 oz sliced mushrooms
1/2 c flour
1/2 tsp salt
1/4 tsp pepper
1 1/2 c milk
1 1/2 c chicken broth
2c cooked chicken, cubed (I used Tyson's precooked)
2oz jar pimentos, drained lightly
rice, noodles, or bread to serve over

Put peppers, mushrooms, and butter in a saucepan. Cook on Med to med-high heat
until the peppers and mushroms are almost cooked through. Add flour, salt, and 
pepper to the pan, stir until combined and thickened. Stir in milk and broth. Heat to boiling, stirring
constantly, continue to stir while sauce thickens, then turn down the heat to med, med-low. Stir in 
the cooked chicken and pimentos, allowing to simmer and heat through while you prepare the rice
or noodles for serving.

** for the success of this dish and its full flavor, do not use anything but butter, and also use fresh mushrooms.  If you have the time, cooking your own chicken fresh is ideal, but for a quicker week night meal
substituting pre-cooked chicken works fine.
