Chicken Makhani

This is a super easy and yummy recipe, it has definitely become a family fave :) Not the best photography, but again... I am just a regular mom that looks to cook and do crafts, I am definitely not a photographer lol!

2lb chicken, cubed (I used skinless, boneless breasts)
2 small onions sliced or 1 large
4 tsp crushed garlic (I used garlic paste)
3 tsp crushed ginger (again I used paste)
28oz can crushed tomatoes w/juice
1/2 tsp cinnamon
1tsp turmeric
2 tsp red chili powder
2tbsp ground coriander
2 tbsp tomato paste
1c plain yogurt (I used fat free)
1 stick of butter
 *Cooked rice to serve on


Melt butter in saucepan, add cinnamon and onions. Cook and stir until onions are almost done. Add garlic and ginger, stir a few more minutes on low to incorporate the flavors. Add turmeric, chili powder, and coriander. Saute and stir a few more minutes. This lets all the flavors from the spices really come out before adding more ingredients. 

Add the cubed chicken, stirring consistently while cooking on a med to med low heat until the chicken is almost fully cooked.

 Add the tomatoes and the tomato paste, mix thoroughly and let simmer and cook while you cook rice to serve over.

Once rice is finished, add the yogurt to the chicken mixture and stir to heat through. Serve over the rice.

 Made enough to serve 6 of us. Very easy to cut recipe exactly in half if you want to feed less.
