Creamy Chicken and Bacon Angel Hair Pasta

This was so super yummy, I got the recipe from some magazine, but I can not remember which one. In any case I changed it up a bit, so take a peek and enjoy! The kids love this one and said to put it in my "must make again" file. :)  Remember we feed 7, so there might be more than you need, in which case just scale it back by half or a quarter.


1 1/2 boxes of angel hair pasta (about 24 ounces)
2 pounds of chicken cutlets/tenders cut into chunks
1 tsp salt
1/2 tsp pepper
2 tsp Italian Seasoning
3 tbsp olive oil
1/2 stick butter
1 large onion, diced
1 large green pepper, diced
16 ounces freshly sliced mushrooms
1tbsp minced garlic, or garlic paste
1lb bacon, cooked and crumbled
3c heavy cream
3 tbsp lemon juice
1c freshly shredded Parmesan

Cook pasta according to package. While pasta is cooking, put butter, oil, onions, garlic, mushroom, peppers, seasonings, and chicken in a saute pan. Cook over med heat until the chicken is cooked through. Once chicken in cooked stir in the lemon juice, bacon, and heavy cream, bring to a slight boil.  Simmer for a few minutes until slightly thickened. Serve over cooked pasta with freshly shredded Parmesan.
