Pork Chops in Blackberry wine sauce

The originak recipe came from Paula Deen but I changed it up a bit. It is something new for me, I am not one to usually cook savory food with fruit. This was great though and I am so glad that I tried it! Obviously this is for our family of 7 so if you need less just cut the ingredients in half.


7 pork chops, cut about 1 inch thick from butcher
salt
pepper
garlic powder
onion powder
1 stick of butter
1/2 c olive oil
1c blackberry merlot
1/4 c honey
half bunch of fresh thyme

Sprinkle the salt, pepper, onion powder, and garlic powder onto both side of the pork chops... amount used is to fit your tastes. Put butter and oil in a large saute pan. Sear the chops and cook a 2 to 4 minutes per side.
Remove the chops from the pan and set aside. Add merlot to the pan and let simmer/lightly boil while scraping the bits off the bottom of the pan until the wine is almost evaporated, about 10 minutes. Add honey and blackberries to the pan, stirring to mix thoroughly and cook until blackberries are softening. Add thyme and put pork chops back in the pan until pork chops are cooked through.

These were definitely the moistest pork chops we have had in ages! Do try it! It is sooooo yummy!

  5. Wade loves pork chops but hates honey and not so sure he would be thrilled with the blackberry merlot either...lol They do look delicious though
