Chicken Frito Casserole

Ok, maybe this sounds a little iffy ... well, it did to me anyway. However, I tried it none the less out of sheer curiosity. It turned out that it was rather fantastic!! I got the original recipe from Noble Pig, though I did switch it up just a bit and doubled it for our bigger family.


Chicken Frito Casserole

1.5  of chicken tenders, cut into bite size pieces
2 tbsp oil
1/2 tsp salt
1/4 tsp pepper
1 tbsp minced garlic
1 1/2 tbsp chili powder
2c chicken broth
1 4.5 oz cans of diced green chilies
2 cans of cannelini beans
1 bags of fritos
1 8oz bag of shredded Pepper Jack cheese


Preheat oven to 350 degrees. 

In a large saucepan warm the oil. Add the chicken, salt, pepper, garlic,
and chili powder. Cook, stirring frequently until almost done. Add the chicken
broth, chlies, and beans to the pan. Cook until thickened and 3/4 of the liquid
has cooked down.

Put half of the bag of fritos in the bottom f a 9x13 inch pan. Pour the chicken mixture
on top. Add the rest of the fritos and top with the shredded cheese.

Bake for 10 to 15 minutes, until the cheese is melted and slightly golden. 

*This is really great and has a yummy crunch to the top pieces. It is fantastic served with sour
cream and if you like guacamole that is great as well, I just happen to hate guac! lol

  1. sometimes the ones that sound or look the worst are the best ones. I would try this but I'm pretty sure there is no way Wade would eat it...lol

  2. Mmm, that looks so good. My mouth is watering at the recipe - especially with something with Fritos! Definitely trying this week when I get home - my brothers will love it!
