Grown-Up Mac n Cheese
4c heavy cream
2 sprigs of fresh rosemary, chopped
1 tsp salt
1/2 tsp pepper
1 package of precooked bacon, chopped
2lb macaroni, cooked
8oz shredded Gruyere
8oz shredded Fontina
Add to a medium saucepan the cream, rosemary, chopped bacon, salt
and pepper. Bring to a light boil (careful not to scald or boil over) stir frequently
and keep at a low boil until the cream thickens. It takes around a half an hour, just be
patient and keep your eye on it, remembering to stir.
Once your pasta is cooked and drained, and the sauce has thickened add the cheese to the
sauce, take off the heat and stir until all the cheese fully melts and incorporates.
Add to the cheese cause to the macaroni and stir to evenly coat. Serve immediately.
This is also great the next day, and if you freeze it it keeps well.

ReplyDeleteThis is not good. I broke my foot and I cannot do anything, let alone workout, I decided that I have to watch what I put in my mouth. No delicious mac and cheese for me.
