Now...on to the yumminess! Last night for dinner I made corn chowder. It was SO good! I figured I never share any recipes but desserts...maybe that accounts for my weight lol. Anyway we do eat other stuff around here so I am sharing that, too hehe.
Corn Chowder
1 pound of bacon
1 large sweet onion, chopped
2 red bell peppers, chopped
salt and pepper to tast
1 heaping tbsp minced garlic
1/2 c flour
6 c of chicken broth or stock
3 large red potatoes, chopped
1 1/2 c heavy cream
32 oz frozen corn
cayenne pepper to taste
dash of parsely for color
Cook bacon to desired doneness. Set aside until cool and then chop, reserving to add to soup later. Drain most of the grease from the pan and then cook the onion and red pepper in the same pan until almost done. Add garlic, salt, and pepper, and cook until fragrant and garlic is warmed through. Add flour and stir until mixed, then add chicken stock slowly, stirring. Add potatoes, bacon, corn, and cayenne and let it come to a slight boil to start thickening, stir frequently and then lower temperature and let it simmer for about a half hour. The cayenne should give it a nice little kick but not be overwhelming at all. Add heavy cream and parsley; let cook about ten minutes more, then serve. Eat and say, "Yummm!"

ReplyDeleteAy Ay Ay! mexican corn soup is what we call it- used tomake it for my Spanish classes! Fun. Do you put jalepeƱos in it?
