Strawberry Ice Box Cake

I love the fact that this dessert is using fruit while it is in season. I love that it is light, not too sweet, and requires no baking what so ever! My kids loved the taste and they thought it was awesome that this cake had no cake in it! hehe.

SO easy you have to try it. It does take time though because you want it to sit in the fridge awhile.


Here is the deal, this yummy "cake" has no cake :) It is basically a layered dessert made with graham crackers. The pudding and whipped cream soak into it by the time you eating it making it a totally scrumptious and delicious cake like texture.

You will need:

1 box of honey graham crackers
one box of french vanilla instant pudding mix
2 pounds of strawberries
4c of whipping cream
9 tbsp sugar
chocolate syrup
*Make the instant pudding according to package directions and set aside to thicken.
*Make the whipped cream by combining the whipping cream with the sugar by whipping at high speed adding one tbsp of sugar at a time to incorporate. Beat until cream is at the stiff peak stage.
*In a 9x13 inch pan lay down 5 to 6 graham crackers. Spread pudding on top of crackers. Spread whipped cream on top of that and then layer with strawberries and drizzle with chocolate. Continue process until you have four graham layers and then end with whipped cream on top. Let sit for several hours in the fridge.



SO delicious. If you want a less messy gooey version simply add less whipped cream. I have a thing for fresh whipped cream and strawberries so I went a bit overboard with the cream! :) YUUUMMMMY!
